Bean Dip + Cinco De Mayo Sales.

We’re excited to introduce a new contributer to you today: Kimberly, our lovely sister in-law.

Kimberly is a very talented mother of 4 boys who loves to spend her time cooking, sewing, piano playing, singing and thinking up the most amazing projects. We love her, and hope you will too!

Good morning Boxwood Clipping readers, I’m excited to be here today to share a little heathy snack, and a little shopping tip!

Some cans in my kitchen cupboards sit around for awhile before they get used. Re-fried beans don’t have that problem, I’m always rotating them because my family likes Bean Dip. Whether I need a quick snack after church or a dinner for the boys on date night, I feel good about offering this for the taste and nutrition.

Any assortment of beans, cheese, sour cream, salsa and avocado will do, and then chips to scoop.

Since it’s Cinco de Mayo coming up, I am sure your local grocery store is planning a sale on Mexican food items. Locally, Macey’s has Roma Tomatoes on sale for 69¢ lb, fresh jalapeno peppers also for 69¢ lb, but best of all they have refried beans as low as 49¢ a can. This probably the BEST time of the year to stock up!

Although chips are also on sale, I particularly enjoy “Food Should Taste Good” Brand Multi-Grain Tortilla Chips, seen HERE. I find them at Costco, and the ingredients include: Flax, Sunflower, and Sesame Seeds, Quinoa, Soy, and Brown Rice along with the Stone Ground Corn.  They are a yummy alternative to feel good about.:)
