Martha Stewart’s Apricot-Dijon Chicken

Our sis-in-law, Kimberly first introduced us to this super easy and delicious chicken from Martha Stewart.

What You’ll Need:

4 Chicken Breasts (tenders or thighs work too)

12 oz Apricot Jam

2 TBSP Honey

2 TBSP Dijon Mustard


Bring jam, honey, and mustard to a boil in a saucepan on medium heat, while whisking. Reduce heat to low and simmer until thickened and reduced by half, about 15 mins.

Cut chicken into thick strips, place in a baking dish and pour mixture over chicken.

Bake at 425 for 30 mins, occasionally spooning juice from bottom of dish on to the chicken.


This is one of those semi-homemade meals with major wow factor that doesn’t take too long at all. Both kids and adults love it, making it a great family dish. We hope you enjoy it too!

    Tried this using only 2 breasts cut into thick pieces. It only took 20 minutes. Any longer and it would have been too dry. We really liked it. Will try using thighs next time.
