Happy Halloween everyone!
Today we’re sharing this delicious side dish for when you want to take your taters up a notch!
What You’ll Need:
2 lbs potatoes
2 lbs butternut squash
2 c cheddar cheese
2 c cream (half and half would work too)
4 large sage sprigs
3 cloves of garlic (smashed)
First makes your sauce by slowly bringing cream, garlic cloves and sage sprigs to a boil over medium heat. As soon as it starts to bubble remove from heat and set aside. Next peel and slice potatoes and butternut squash, toss with 1 cup of cheese and salt and paper and place in greased baking dish.
Remove sage and garlic cloves from sauce and pour over potatoes and squash. Top with remaining cheese. Bake at 400, for 45 mins until veggies are tender.
Two words: COMFORT FOOD!
