Beet + Mint Side Salad

Do you like beets as much as us?

Did you know they are packed with cancer fighting anti-oxidants?!

This super food is in peak season (June-October), and you have to try this pairing…so delicious!!!

2-3 beets beets

2 small potatoes

1/4 c goat cheese

2 sprigs of mint


Boil peeled and cubed potatoes until slightly soft. Toss with olive oil, S+P and broil in oven for 20 mins, tossing once.

Steam/boil beets until tender and chop to desired size.

Top with goat cheese, mint and S+P.

Serve hot or cold with chicken or fish.
