Go-To Lunch: Baked Sweet Potatoes
It happens at the same every year….salad going bad at the bottom of the fridge. It’s too cold and unappetizing! Any one else have this problem?
As you know we are huge salad fans, so we really need to get inventive during the winter months to get our veggies in.
We have been LOVING baked sweet potatoes for lunch the past few weeks.
Wash, prick with a fork and place in the microwave for 5-10 mins. Serve with cottage cheese, butter and S+P or whatever you like.
Easy, inexpensive, satisfying and (somewhat) nutritious!
