Easy Chicken Fajitas

Another family favorite we have been loving for dinner this winter are chicken fajitas!

Warm, healthy, delicious and easy to customize for the pickiest of eaters…

boxwood clippings | chicken

frozen chicken breasts
your favorite tortillas (we like the uncooked ones from Costco)taco seasoning
bell peppers
yellow/white onion

You cannot get easier than chicken fajitas. Warm a skillet/frying pan on med-high and cook thawed sliced chicken breasts in a little olive oil and taco seasoning. When no longer pink, add sliced onions and bell peppers and reduce heat to medium until peppers and onions are cooked and tender.

Next you’ll need to cook/warm your tortillas while you’re getting all your fixins’ and table ready.

Serve a ‘taco’ bar with any veggies and toppings you have in your fridge…
avocado, salsa, corn, lettuce, beans, rice or cheese, you cannot go wrong.

We are calling it a winner for a cold January night. It’s easy on the budget, time and did you know bell peppers are full of vitamin A, C and B6? Just what our families need this time of year!!!
