Leek and Potato Soup

We have hardly had a day over 30 degrees in quite some time and all we can say is thank goodness for soup!

We usually make soup for dinner one night and freeze leftovers in individual portions…perfect for winter lunches for us and the babies!

Here is a tasty new recipe we’ve been loving.

2 cups chopped leeks
1 diced onion
4 small potatoes (diced)
48 oz chicken or vegetable broth
2 TBSP dried parsley
2 cups whole milk or half and half


Saute leeks, onion and potatoes on med-high for 7-8 minutes until slightly tender. Add broth to cover veggies, add parsley and bring to the boil and then reduce to a simmer while stirring occasionally. Cook until vegetables are tender and blend with an immersion blender until smooth. Stir in milk and serve with a swirl of heavy whipping cream or croutons.

With January being so drab and dark, Sarah couldn’t bear the thoughts of taking down all the twinkly lights!

A New Family Room Rug for Emily

Good morning everyone! I have been looking for a new rug for the family room for some time now. The one we had (HERE) was a dark brown shag…so cozy and great value from Costco, but I love how a patterned rug can transform a room and I really craved a big change for the family room.

I saw a great deal on THIS rug at Target for 30% off. Way under $200 for a 6′ x 9′ rug is pretty unheard of plus free shipping, and a local Target to return to if needed was all too easy not to give it a try…

This was the perfect new addition for the new year. It has that ‘new’ smell that has geared me up to de-clutter and clean the whole house! Jane rolls around on it all day because it is so cozy. It has brightened up the space so much and really just updated the whole room.

Crazy how one piece can change a space and I’m so in love with it I could literally put it in every room of the house! The deal is off now, but a similar one will sure to return soon if any of you are looking for a new statement rug?!!!

Veggie-Packed Spaghetti Sauce

One of our New Year’s goals is to pack more nutrients into our ‘normal’ meals.

Spaghetti is a favorite in our homes and even though normally it’s less than nutritious, aren’t we all happy to serve something we know everyone will like and eat sometimes?!

Well, we decided to try to turn it up a notch by adding veggies to the basic dish and serving with a blend of whole-wheat pasta…

1 lb ground beef (we use grass-fed 90% lean)
1/2 diced onion
1 tsp minced garlic
1 jar spaghetti sauce
1 can diced tomatoes
1 TBSP Italian seasoning
1 cup carrots (sliced very small)
1 zucchini
3-4 stalks of celery


Brown meat on medium-high. Add diced onion and garlic and saute until onions are clear. Add sauce, tomatoes, seasoning, and diced raw veggies. Bring to a boil and then reduce heat to a simmer until veggies are tender (about 30 mins).

Serve with 1/3 part whole wheat pasta, 2/3 regular spaghetti, shhh no one being able to tell the difference!

Husband and toddler approved, and we love, love, loved packing some veggies into this family favorite!

Happy New Year everyone! How is your new year going?!!! We are slooowly getting back into the swing of things. We’ve had sickness, as well as the organization bug that has consumed us for the last week (our houses are disaster zones)…AND we are potty training the three little ladies!

Last week, Emily had the big 20 week ultrasound and there is no hiding the bump anymore!

We are headed for another full year and cannot wait for baby boy to join us!

We have SO MANY goals for our blog this year and cannot wait for all the good things to come. Thanks for coming along for the ride!
