Veggie-Packed Spaghetti Sauce

One of our New Year’s goals is to pack more nutrients into our ‘normal’ meals.

Spaghetti is a favorite in our homes and even though normally it’s less than nutritious, aren’t we all happy to serve something we know everyone will like and eat sometimes?!

Well, we decided to try to turn it up a notch by adding veggies to the basic dish and serving with a blend of whole-wheat pasta…

1 lb ground beef (we use grass-fed 90% lean)
1/2 diced onion
1 tsp minced garlic
1 jar spaghetti sauce
1 can diced tomatoes
1 TBSP Italian seasoning
1 cup carrots (sliced very small)
1 zucchini
3-4 stalks of celery


Brown meat on medium-high. Add diced onion and garlic and saute until onions are clear. Add sauce, tomatoes, seasoning, and diced raw veggies. Bring to a boil and then reduce heat to a simmer until veggies are tender (about 30 mins).

Serve with 1/3 part whole wheat pasta, 2/3 regular spaghetti, shhh no one being able to tell the difference!

Husband and toddler approved, and we love, love, loved packing some veggies into this family favorite!

    For picky eaters it’s also a good idea to blend the veggies into the sauce, so little ones can’t see them……
