Low Carb Cucumber and Turkey Sandwiches

As the weather warms up we’re looking to try new things for lunch. With Em being gluten free and both of us trying to be a little more carb conscious we tried these cucumber sandwiches.

We sliced an English cucumber thinly, spread with plain cream cheese and layered with Columbus brand turkey. We garnished with a little dried dill and that is all! We can imagine these being amazing midsummer after a morning at the pool, and also great for a little low carb snack any time.

Em’s Little Bunnies

Sarah and I were discussing Easter outfits for the kids last week and thought it was about time to give the kids a dress rehersal. Jane has been obsessed with her bunny ears since we brought up the Easter bin from the basement. We stuck a homemade pom pom onto Ben’s shorts with a safety pin, and what do you know we have our own little Benjamin Rabbit and Janey Cottontail.

Ralph Lauren is one of our favorite places for kids clothes. They usually have two major sales a year…one after Christmas, the other sometime after Easter. This is when we stock up for the following year and get crazy prices. Both of these outfits were around $20 last summer and have been sitting patiently in the closet til now.

The day of Easter is always so crazy I’m loving I have this year’s Easter outfits documented before the big day.
I’m starting a new tradition of ‘dress rehearsal Easter’, will you join me?!

A Fresh Kitchen Update, Just in time for Spring!

We were meeting new neighbours a few weeks ago, when I told them we’d been in the neighbourhood 11 years this Fall.

Wow! Really? Yes!

These were the days before Pinterest, or Instagram, when my inspiration came from great magazines and movies (remember that?)! I copied, as best I could within our budget, the glorious kitchen from a favorite movie, “Something’s Gotta Give,” and I’m happy to say, 11 years later, I still love my kitchen.

Having said that, there are always things I’d like to change. The appliances were the only stainless steel option to choose from, and that curve on the stove and microwave has always bugged me. We never upgraded our faucet, and I wish we’d taken off the granite lip when installing the backsplash, BUT we finally ticked one thing off the list this month when we got new pendants above the island! Yayyy!

I’ve had my eye on these for a while, and while I was debating size and thinking of another 1000 changes I want to make around the house, they had a flash sale, and I was sold!

What I love about adding new light fixtures is that it doesn’t have to cost a lot to really update a room, and that’s exactly what I think happened here. A softer yet bolder look. I’m happy!

Another trend that is super popular right now is the farmhouse look. To add more warmth to the dining room, I brought down a cabinet that was part of a bedroom set we were no longer using, except for extra storage.

It’s lovely that this adds height and more texture to the space, and gives me needed storage downstairs for the girls’ art supplies and placemats, etc., that until now have been cluttering up the pantry.

With just a few updates, and spruces in styling, my kitchen feels fresh for Spring.

Now I need to get deep into the cleaning (think inside that oven, yikes!)

We have several friends working on their kitchens at the moment, and I’ll share the advice we gave them…

When designing or purchasing a kitchen, really try and channel your core taste. Trends will come and go, but for the most part you know what you love; go with that for your big ticket items. You can always bring in the “trendy” styles with less permanent items like lighting or accessories or even furniture.

Now on to the next room to freshen up!
