Low Carb Cucumber and Turkey Sandwiches

As the weather warms up we’re looking to try new things for lunch. With Em being gluten free and both of us trying to be a little more carb conscious we tried these cucumber sandwiches.

We sliced an English cucumber thinly, spread with plain cream cheese and layered with Columbus brand turkey. We garnished with a little dried dill and that is all! We can imagine these being amazing midsummer after a morning at the pool, and also great for a little low carb snack any time.

    Fellow celiac! I make this all the time, sliced round as finger sandwiches for the kids. My favorite is herbed (even a simple onion and chive) or veggie cream cheese for extra flavor. Another extension is plain cream cheese but with added buffalo sauce which makes for a tangy, spicy but crisp sandwich.
